A simple recipe. It looks more difficult than it looks like with the many ingredients. It’s gluten-free, sugar-free and vegan, although you can easily substitute for ‘normal’ baking ingredients. Photos I took quickly with the iPad.
Crust:
- 1/2 cup brown millet flour
- 1/2 cup chickpea flour
- 1/3 oat flakes
- 1/4 ts arrowroot starch
- pinch of sea salt
- 1 ts cinnamon powder
- 1 ts ginger powder
- 1/8 to 1/4 cup erythritol (or sugar or other sweetener)
- 1/4 cup melted coconut oil
- 3 tbs water
Mix in a bowl and put in an 8” or approx 21 x 15 cm baking form. Bake for 12 min at 180 degrees Celsius.
Apple filling:
- 4 large or 6 small apples, peeled and sliced
- 1/2 ts apple cider vinegar (optional)
- 1,5 tbs maple syrup
Crumble topping:
- 1/2 cup chickpea flour
- 1/2 cup millet flakes
- 1/4 to 1/2 cup erythritol
- pinch sea salt
- 1/4 cup coconut oil
Mix it all up and cover the apple.
Bake it for 45 to 60 minutes at 180 degrees C. Leave it to cool down. If you take it out too early, it falls apart. Still tastes good :)
